What are the big things to know about brews in Seattle? We asked Alix Walper — who taught our sold-out Sharing Passions class last night — to give us a teas…

What got you into tea?

Ice cream, believe it or not! I was working with Salt & Straw Ice Cream in Portland back in 2014 when I tasted a chamomile marmalade swirled through a strawberry ice cream. I was in love.

What’s something people tend not to know about tea but should?

The first thing I share when educating folks is that all tea comes from the same plant — Camellia sinensis. Another important thing to understand is the temperature of the water really matters. You can steep it anyway that fits the flavor you’re going for. Not a lot of beverages allow you that freedom.

What are your four top tea spots in Seattle?

Miro Tea in Ballard: An amazing spot to expand what you know about lesser-known tea categories and try specialty drinks.

Queen Mary Tea Room in Ravenna: This is a British high tea experience that I highly recommend. Don’t forget to make reservations and bring a few friends.

Floating Leaves Tea Room in Ballard: They are known for origin-focused tea sourcing. When you’re ready to take your home tea collection to the next level, this is where you go.

Perennial Tea Room downtown: This truly is a must. They have a very large selection and you can purchase by the ounce, [which] is great when you’re experimenting to find teas you like.
